Born from a deep connection to Italy, its cuisine, warmth, and enduring sense of hospitality, our story began along lemon-scented shorelines and in intimate trattorie, with roots that stretch from Umbria to a wedding in Tuscany.
That passion found its home in Key West, where sea breezes drift through open doors, handmade pasta is crafted with care, and the clink of spritz glasses sets the tone for an experience that is both refined and warmly inviting.

At Conchiglia, Italian culinary tradition is thoughtfully reimagined in the Florida Keys. Rooted in authenticity—handmade dough, imported cheeses, and the finest olive oil—our menu is elevated by the vibrant ingredients of the islands, from local snapper and Key West shrimp to bright citrus, tropical guava, and seasonal produce.

The Founders
ALBENA & MICHAEL DANA
We didn’t just open a restaurant, we restored a historic Conch house and shaped it into a reflection of our journey. From rebuild to design, we were hands-on in every detail: Albena led the coastal interiors, while Michael oversaw the structural work and finishing touches.

Executive Chef
Paolo Gallotti
Chef Paolo Gallotti, a native of Rome with over 25 years of international experience across Italy, Australia, Japan, and the U.S., is known for his technical skill and creative vision. Raised in his family’s kitchen, he developed a deep respect for traditional Italian cooking centered on handmade pasta, seasonal ingredients, and simplicity. At Conchiglia, he blends Roman tradition with modern techniques and the flavors of the Florida Keys.
